Pumpkin Coconut

Ingredients:
-1 can of pumpkin puree
-1 can of coconut milk -1/4 cup of red curry paste -1 large onion, diced -2 cloves garlic, minced -1 tablespoon fresh ginger, grated -1 teaspoon ground cumin -1 teaspoon ground coriander -1 teaspoon turmeric powder -1 teaspoon sea salt -1/4 teaspoon ground black pepper -1/4 teaspoon chili flakes -2 tablespoons olive oil
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.
3. Add the pumpkin puree, coconut milk, red curry paste, ginger, cumin, coriander, turmeric, salt, pepper, and chili flakes. Stir to combine.
4. Bring the mixture to a boil and then reduce the heat and simmer for 15 minutes, stirring occasionally.
5. Taste and adjust seasoning if needed.
6. Serve with cooked rice or your favorite grain. Enjoy!
